Cabernet-Soy Tri-Tip


1 cup Cabernet
2/3 cup sugar
1/2 cup soy sauce
4 cloves garlic
6 slice fresh ginger
4 lbs beef tri-tip

Combine wine, sugar and soy in plastic bag.  Crush garlic and ginger; add to bag.  Wipe beef with damp towel, put i bag; seal.  Marinate at least 30 minutes.

Lift beef from bag, reserving marinade.  Grill beef to internal temperature of 125 degrees F (20-30 minutes for a 1 1/2 - 2" thick piece).  Remove meat to carving board; let rest for 5 to 10 minutes.

Meanwhile, pour marinade into a 1 1/2 - 2 qt. pan.  Over high heat, boil marinade until reduced to 1 cup (about 5 minutes).  Remove ginger and garlic.  Pour marinade sauce into a bowl and add juices from meat.  Slice meat thinly across the grain.  Serve with sauce.
