Spiced Pork Tenderloin


3 lbs pork tenderloin
3/4 cup olive oil
4 1/2 t ground cumin
1 1/2 t cayenne pepper
1 1/2 t ground cinnamon
3 T chopped garlic

Combine all ingredients except meat in bowl.  Rub over pork.  Cover and refrigerate at least 4 hours or overnight.  Preheat oven to 400 degrees.  Heat large nonstick skillet over high heat.  Season pork with salt and pepper.  Add to skillet in batches and brown on all sides, about 5 minutes per batch.  Transfer pork to large baking pan.  Roast pork until thermometer inserted into thickest part registers 155 degrees, about 15 minutes (can be much longer).  Transfer pork to platter; let rest 5 minutes.  Cut pork into 1/2" slices.  Arrange on plates.

Option:  After marinating meat for required time, broil to brown.

Option:  After browning meat, place in crockpot and cover with can of cranberry sauce and tablespoon of dijon mustard and cook on low for 6-8 hours or high for 4-5 hours.
