Orange-Glazed Sweet Potatoes

8 medium-size sweet potatoes (about 4 lbs.) |
2 Tablespoons grated orange rind |
1 cup orange juice |
1/3 cup sugar |
1/3 cup firmly packed brown sugar |
3 Tablespoons butter, melted |
1 Tablespoon cornstarch |
1/4 teaspoon salt |
Place
washed sweet potatoes in a large Dutch oven; add water to cover.
Bring to a boil; cover, reduce heat to medium, and simmer 25 to 30
minutes or until tender. Let
cool to touch; peel potatoes, and cut into ½-inch-thick slices.
Arrange slices in a lightly greased 13- x 9- x 2-inch baking dish. Combine
orange rind and remaining ingredients in a small saucepan.
Bring to a boil; boil 1 minute.
Pour mixture over sweet potato slices.
Bake at 350 degrees for 25 minutes or until thoroughly heated.
Yield: 8 to 10
servings. Note:
Potatoes may be prepared ahead.
Prepare as directed above, do not bake.
Cover and refrigerate up to 8 hours.
Remove from refrigerator; let stand, covered, 30 minutes.
Uncover and bake as directed above. |
