Chinese Chicken Salad
|2 chicken breasts, poached or broiled, cut into 1/2" pieces|
|1/4 Romaine lettuce, cut into 1" pieces|
|1/3 Napa cabbage, thinly sliced|
Assemble salad ingredients. Add dressing to desired taste. Toss.
|1/2 cup soy sauce|
|1/2 cup red wine vinegar|
|1/2 cup sugar|
Bring to a boil, then add 1/4 cup vegetable oil and 1/4 cup sesame oil. Bring to a boil, then chill. The dressing can be kept in refrigerator for a couple of months.
