Genealogy Kids Salads

 

Chinese Chicken Salad

 

Salad:
2 chicken breasts, poached or broiled, cut into 1/2" pieces
1/4 Romaine lettuce, cut into 1" pieces
1/3 Napa cabbage, thinly sliced
green onions
cilantro
toasted almonds
sesame seeds

Assemble salad ingredients.  Add dressing to desired taste.  Toss.

Dressing:
1/2 cup soy sauce
1/2 cup red wine vinegar
1/2 cup sugar

Bring to a boil, then add 1/4 cup vegetable oil and 1/4 cup sesame oil.  Bring to a boil, then chill.  The dressing can be kept in refrigerator for a couple of months.
