Saucepan Cocoa Brownies

1/2 cup butter
6 T unsweetened cocoa powder
1 cup granulated sugar
1/2 t vanilla
2 large eggs
3/4 cup flour
1/4 t salt
1 cup coarsely chopped nuts (optional)

Grease 8 X 8-inch pan and line with greased foil.  Preheat oven to 325 degrees.

Combine butter and cocoa in medium saucepan.  Heat over low heat, stirring, until butter is melted.  Set aside to cool.

When cocoa is lukewarm, beat in sugar and vanilla.  Beat in eggs one at a time.  Add the flour and salt and beat just until combined.  Stir in nuts.

Pour into prepared pan and bake for 20 minutes or until top is dull.  Turn out on rack; remove foil, and cut into squares.

Note:  recipe can be doubled if put in large saucepan, 9 X 13-inch pan, and baked 20 to 25 minutes.
