Pumpkin Cheesecake |

Crust: |
3/4 cups crushed graham crackers |
1/2 cup ground nuts |
1/4 cup brown sugar |
1/4 cup white sugar |
1/2 cup butter, melted (can be less--1/4 cup) |
Combine and pat into 9" spring form pan. Freeze until firm. |
Pumpkin Mixture: |
3/4 cup sugar |
3/4 cup canned pumpkin |
3 egg yolks |
1 1/2 t. cinnamon |
1/2 t. ground mace |
1 1/2 t. ground ginger |
1/2 t. salt |
Mix and set aside. |
Cheese Mixture: |
Mix: 1 1/2 lbs cream cheese, 6 T. sugar Add: 1 egg and 1 egg yolk Add and mix well: 1 T corn starch Add : 1/2 t. vanilla 1/2 t lemon extract Mix until smooth. Combine with pumpkin mixture. Pour into crust and bake at 350 degrees for 45 to 60 min. or until sides have risen. |
