Pumpkin Cheesecake

 

 

Crust:
3/4 cups crushed graham crackers
1/2 cup ground nuts
1/4 cup brown sugar
1/4 cup white sugar
1/2 cup butter, melted (can be less--1/4 cup)
 Combine and pat into 9" spring form pan.   Freeze until firm.
Pumpkin Mixture:
3/4 cup sugar
3/4 cup canned pumpkin
3 egg yolks
1 1/2 t. cinnamon
1/2 t. ground mace
1 1/2 t. ground ginger
1/2 t. salt
Mix and set aside.
Cheese Mixture:

Mix: 1 1/2 lbs cream cheese, 6 T. sugar

Add:  1 egg and 1 egg yolk

Add and mix well: 1 T corn starch

Add :  1/2 t. vanilla

          1/2 t lemon extract

Mix until smooth.  Combine with pumpkin mixture.

Pour into crust and bake at 350 degrees for 45 to 60 min. or until sides have risen.
