Chocolate Mayo Cake
|1 2/3 cup sugar|
|1 t vanilla|
|1 cup mayonnaise|
|3/4 cup cocoa powder|
|1/4 cup butter, melted and cooled|
|2 1/4 cups flour|
|1 t baking soda|
|1/4 t baking powder|
|1 1/3 cups water|
Combine sugar, eggs, and vanilla in mixing bowl and beat at high speed. When combined, reduce to low speed and add mayo, cocoa and melted butter. Mix well.
Mix together flour, soda and baking powder.
While beating at low speed, add flour mixture to egg mixture in four separate additions, alternating with water (water in three additions), ending with flour.
Pour into a greased and floured 9 X 13 pan. Bake at 350 degrees for 45 minutes or until toothpick comes clean.
