BBQ Pork Ribs

 

2 slabs boneless country style pork ribs
Rub:
4 T cumin
2 T chili powder
3 t cardamom
3 t cayenne
3 t cinnamon
2 T dry mustard
2 T coarse salt
Sauce:
4 cups onions
2 cups ketchup
4 cups brown sugar
1 T celery seed
3 cups bourbon
2 cups tomato paste
1 bulb garlic (chopped)
1 cup cider vinegar
1 cup apple juice
2 cups Dijon mustard (whole grain)
2 cups water
2 T cumin
1 cup Worcestershire sauce

Combine rub ingredients in bowl and when mixed, rub onto ribs.  Place ribs in ziplock bags and refrigerate overnight.  Broil, turning meat, until evenly browned.  Place ribs in crockpot. 

In a separate bowl, sauce ingredients.  Add onions and pour over ribs in crockpot.

Cook on high for 4 to 5 hours or low for 8 to 10 hours.
