Tart Lemon Squares

 

1 cup all purpose flour
1/3 cup sifted powdered sugar
1/4 cup plus 1 T butter, cut into pieces
1 cup sugar
2 T all purpose flour
1 1/2 t grated lemon rind
1/2 t baking powder
1/4 t salt
3 egg whites
1 egg
7 T fresh lemon juice
1/4 t butter flavoring
2 T powdered sugar

Combine 1 cup flour and 1/3 cup sifted powdered sugar in a bowl; cut in butter with a pastry blender until mixture resembles coarse meal.

Press mixture firmly and evenly into the bottom of an 11X7X2 baking dish coated with cooking spray.  Bake at 350 degrees for 20 minutes or until lightly browned.

Combine sugar and next 6 ingredients in a medium bowl; stir with a wire whisk until blended.  Stir in lemon juice and butter flavoring.  Pour mixture over prepared crust.  Bake at 350 degrees for 20 minutes or until set.  Cool completely on a wire rack.  Sift 2 tablespoons powdered sugar over squares.
