Grandma Eyla's Sugar Cookies


2 eggs
2/3 cup vegetable oil
2 t vanilla
1 t grated lemon rind
3/4 cup sugar
2 cups sifted flour
2 t baking powder
1/2 t salt

Preheat oven to 400 degrees F.  Beat eggs with fork until well blended.  Stir in oil, vanilla, and lemon rind.  Blend in sugar until mixture thickens. 

Sift together flour, baking powder, and salt and stir into oil mixture. 

Drop with teaspoons 2" apart on ungreased cookie sheet.  Flatten with a greased glass dipped in sugar; decorate tops with colored sugar as desired.  Bake 8 to 10 minutes, just until a delicate brown.  Remove immediately from baking sheet.
